Vegan restaurant on the Strip

So I'm taking my mother to Vegas. She's vegan but I'd love to take her to a fancy restaurant for dinner. Can anybody recommend anything? Or a restaurant that has a selection of vegan options, not just a "get a salad-with-no-cheese-no-dressing-no-egg-no-bacon", leaving you with a bed of lettuce. That won't work. Thank you

I am not a vegetarian and don't know the vegan rules but wife and I went to Pure Vida Bakery and Bistro in July with another couple and my friend's wife is vegetarian and they live in LV. Off the strip as they picked us up.

Really impressive. I did their version of grilled cheese with the cranberry chutney and we split the salsa thing as an appetizer. Here's the link:

I read that Steve Wynn is a vegan.
So I think a lot of the Wynn/Encore restaurants are pretty good about vegan options. I heard they even have special vegan menus
