You could hit up the East Fremont area. Cool, hip bars that are a lot of fun.
On The Strip, I'd recommend Lilly in Bellagio. Good drinks and couch space to chill out and people watch. Shadows at Caesars Palace is a lot of fun for that, too. Chandelier Bar is a great spot to go and have a drink and watch the hot girls that go in to Marquee (A mega-club).
Speaking of Marquee, it has three levels. The middle level is big club style, the top level has "The Library" which is smaller and has it's own music and cool vibe. Same for the bottom level. Both are more intimate.
Let me know what you think of these spots and we can narrow it down a bit more. Also, it will be dependent on what night of the week you're there.----

Be careful letting your friends write off the "big clubs". My last 3 trips I took people that didn't think they would have fun at a "big club" and most all of them absolutely loved it. I'm not saying you need to drop big $ on bottle service. But I'd suggest at least doing GA to a place like XS or Marquee just to see it. Hyde - Bellagio (Club on Tues, Fri, Sat after 10:30pm - otherwise always a lounge)
MIX - Mandalay Bay, cool place with amazing views, upbeat vibe
Cosmo Casino Bars - all good for different reasons, you can spend a night bar hopping in Cosmo
Carnival Court - Harrahs
Lilly - Bellagio
The Pub - Monte Carlo, amazing beer selection (if you like craft brews)

Yeah you will have to go to other resorts for good bars/lounges. Startup at NYNY and make your way towards Cosmo area. Cosmo def has some good bars to visit.Las Vegas is sort of like how God would do it if he had money. ~Steve WynnComment

On Thursday you can get a presale ticket to Hakkasan for $20/guy. That's a steal just to see one of the biggest/baddest nightclubs in the world. Plus there are multiple rooms, some of which will be more laid back. There isn't a huge DJ that night so the crowd shouldn't be insane.
