Agree with Chuck on the hotels.
Bellagio is really nice (the Garden is pretty cool). Venetian - cool because of the gondolas.
Wynn and Encore - Nice. New. Classy. Open.
Cosmopolitan - Decadent, Extravagant, Amazing
Aria - Meh, nice but nothing compared to the others above.
Paris - If they really want to see the Eiffel tower, maybe stop in real quick. I think there is about a $15.00 per person charge to go to the top.
The Palms - Yeah, they wanna go because of Pauly D and The Real World. Ghost Bar and Moon are cool because of their view of the city at night. And N9NE steakhouse is really good and fun. Maybe hit the Palms for dinner and a drink.
Other options for a qood view of the Strip (and/or dinner) at night - VooDoo Lounge at Rio. Mix or Foundation Room (if you can get dinner here, this place is cool. Might require a "membership". We have eaten there in a private room and it is my favorite dinner in Vegas) at Mandalay Bay. Top of the Stratosphere (and you can ride some of the rides if you want).
If you want to watch/gamble on sports, hit the Legasse's Stadium at Palazzo.
Another option if you want to see it all quickly, is to get a limo from the hotel cab line at night. It is usually a flat fee per person of $25 or so. Tell the driver you want to see the strip. Traffic will suck but you can hang out the window and take pictures, scream "Vegas Baby" at tourists/hookers and or flash your boobs.
