How does it work ? I've not done it before.

The strip steak offer doesn't mention anything about not being able to use multiple vouchers at once. I have a party of 7 going to Vegas, we're interested in going, can I buy say 5 x $50 certificates and use them in Strip Steak at the same time off the total bill ?

Some of the other restaurants have restrictions, (e.g. 1 certificate per table) but with Strip Steak it doesnt mention it.

Thoughts ?

When you go to print the gift certificate it says

"Only 1 restaurant specific gift certificate may be redeemed per party, per month, per restaurant, even if the party is seated at seperate tables and/or recieves more than one check."

It seems you would have to divide up your party and pretend to not know eachother in order for it to work. You might just be better off getting the highest denomenation they sell.
