Check out Yellowtail at Bellagio, Union at ARIA, STK at Cosmo, Comme Ca at Cosmo, etc...

I agree with sir pearce's choices. I will add n9ne stake house. But it's off the strip at the palms. also at Wynn there's la cave (wine bar with small plates reasonably priced) and Botero (a fine dining experience with a lounge atmosphere.) Overlooks the pool.

Agree with most of the above. STK atmosphere is good, but I found some of the food to be hit or miss. One steak cooked perfectly, another one way off. They seem like they're riding on their reputation. At the end of the day, the food's still first priority no matter what!

I also recommend Sage at Aria for a more high-end but still chic restaurant. Julian Serrano next door is also great and reasonably priced for a modern spin on tapas.
