    Sterling Brunch at Bally's is about $85, but includes unlimited champagne (Perrier Jouet, the good stuff). I've never been, but heard great things. I have been to the Fountains Brunch at Jasmine, inside Bellagio (distinct from the Sunday brunch at the Bellagio Buffet); the food is amazing, but it's $58 and doesn't include champagne. I'd probably take Jasmine over Bally's, but the decision between the two would probably turn at least in part on how important unlimited champagne is to you.

    As far as the "normal" buffets, brunch at Paris is great, and does include champagne; that'd probably get my vote.

      I used to live in the Waldorf Astoria Towers in New York for a while and would always hit their Sunday brunch. It's very similar to the sterling brunch but doesn't have free champagne so the Bally's version is a better deal.
