Answer is...

yes, you can pay in cash. I prefer to do it this way especially when organizing big groups. It's a disaster to try to get money from people AFTER the night, because you'll have one or more of the following:

• someone say "I already paid" knowing they didn't
• "I didn't drink much"
• "I waited in the girls lineup, I pre-drank and "so-and-so" (usually a husband or bf, f*ck buddy, whatever) said I'm good (when you ask said guy, he acts dumb)
• "I'm a girl"

You get the money beforehand, buy all the bottles and then let the bottle whores come. Then when the party complains how come the bottles got drained so quickly, tell them why and walk away.
